WHITE CHOCOLATE & PEANUT BUTTER BLONDIES.


After sharing my salted caramel brownies with you all at the beginning of the month I have been on a bit of a baking hype and have been trying out lots of new recipes. My favourite of which are these delicious white chocolate and peanut butter blondies. I have never actually tried blondies before let alone baked them, I'm not even really a fan of peanut butter (unless it's coated in chocolate and goes by the name of a Reece's Cup) so I have no idea why I decided to make these but seriously, they are oh so good!

YOU WILL NEED:
125g plain flour, 1 TSP baking powder, 100g butter, 150g crunchy peanut butter, 175g light brown sugar, 1 egg, 1 TSP vanilla extract, 150g of white chocolate.

METHOD:
Start of by preheating the oven to 170C/Gas 3. Butter the sides of a 20x20cm square cake tin and line the base with greaseproof paper. Next sift the flour and baking powder into a small bowl and set aside. In a large bowl, cream the butter and peanut butter together until soft. Add the sugar, egg and vanilla extract and beat until well combined. Add the flour, baking powder and 100g of the chopped chocolate and mix to form a dough. Place in the dough into the prepared tin and bake in the oven for 35 minutes, or until golden brown and almost firm in the centre. Once baked remove from the oven and allow to cool in the tin before removing and cutting into 12 equal squares. Once you blondies are fully cooled melt the remaining 50g of white chocolate in a heat proof bowl above a saucepan of water. When melted get a spoon and drizzle the melted white chocolate over the blondies.

Since trying these out last week they have quickly taken poll position for my new favourite sweet treat! White chocolate and peanut butter is not a combination to be ignored and I would highly recommend trying these even if you're not a peanut butter fan like myself.
