HOMEMADE PEACH LEMONADE.



Today I am taking a walk down memory lane with an old favourite recipe. I was quite literally obsessed with this drink last summer and whipped it up on any occasion possible, I am talking BBQs, picnics, birthdays and even the odd lazy afternoon. As the sun is finally starting to show its face around these parts I thought it was about time I got my trusty delicious summer beverage out and shared it with you guys too! 

YOU WILL NEED:
3 ripe peaches, 2 medium sized lemons, 3/4 cup of sugar, 6 cups of water and lots of ice. 

METHOD:
Start off by roughly chopping up the peaches and throw them into a saucepan, saving a few slices for garnish at the end. Add 2 cups of water and all of the sugar into the saucepan, stir and bring to a gentle boil. Once you have a gentle boil, simmer the peach syrup for a further 10 minutes or until the peaches are tender and break up with a wooden spoon. Next you need to remove the syrup from the heat and transfer into a jug to cool. Once completely cool strain the syrup through a fine sieve into a serving jug. Press as much of the juice through as you can from the peach pulp and then discard. Juice the 2 lemons, discarding any pips and pulp before adding into the peach juice. Then add 3 cups of water, stir then taste. Feel free to add more water here if you find the mix too strong. Serve over plenty of ice, garnish with peach and lemon slices and enjoy!
