Today is one of my favourite non-holiday holidays, Shrove Tuesday aka pancake day! To mark this tremendous occasion I have decided to share my all time favourite pancake recipe with you. I am sure that most Brits will be used to the thin crepe style pancakes on pancake day and however much I do love those this is just my go-to pancake recipe all year round whether that is for breakfast or as a naughty treat.
YOU WILL NEED:
3 eggs, 115g plain flour, 1 TSP baking powder, 140ml milk, pinch of salt & blueberries.
METHOD:
Start by separating the eggs. Once your eggs are separated you need to add a pinch of salt to the egg whites and then whisk until white and fluffy, I recommend using an electric mixer for this just to make the process a little easier. Next you need to combine the egg yolks, flour, baking powder and milk and mix into a thick batter. Now fold the egg whites into the batter - making sure not to knock out all of the air you created whisking them! Once your batter is complete heat up a frying pan with a little oil and use a large spoon to create even pancakes. Whilst one side is cooking drop a few blueberries into the pancake before flipping over and cooking the other side. Serve with an unhealthy amount of maple syrup and scatter with blueberries.
