RECIPE: CARROT CUPCAKES.

Today I am sharing with you one of my old favourite cupcake recipes that has been in my recipe folder for years now. I don't think I have ever came across a single person who does not like carrot cake and as they make great alternative to buttercream laden cupcakes I always find myself coming back to this classic recipe time after time.

YOU WILL NEED:
CAKE: 175g light muscovado sugar, 100g wholemeal self-raising flour, 100g self-raising flour, 1 TSP baking powder, 3 TSP mixed spice, zest of 2 oranges, 2 beaten eggs, 150ml sunflower oil, 200g grated carrots and a splash of orange juice/milk/water.
ICING: 100g butter, 300g full fat cream cheese, 150g icing sugar and 1 TSP vanilla extract. 

METHOD:
Start by preheating your oven to 180 degrees and measuring out all of your ingredients. Once you have done this throughly mix together all of the dry ingredients. Then add in the beaten eggs and sunflower oil before folding in the grated carrots and orange peel. Add a splash of orange juice/milk/water to loosen the mixture and then separate into 12 muffin cases. Pop your cupcake mixture in the oven for 20-22 minutes until they have fully risen and are completely cooked. Leave to cool on a wire rack and in this time prepare your icing. To make the icing you need to wish together the butter and cream cheese before adding in the icing sugar and vanilla essence. Once the cupcakes are completely cool put cream cheese icing into a piping bag and pipe a simple swirl, starting from the centre and working out. When all the cupcakes are iced top with these adorable sugar craft carrots or alternatively you could some fondant icing and easily make your own.

My boyfriend is probably the biggest fan of these cupcakes and has already claimed half of the batch to take to work today. I on the other hand am going to stash a couple away for mini afternoon tea catch up with my friend.
