I seriously cannot believe that I have been blogging for over a year and a half now and I have never shared a muffin recipe with you! Probably not that shocking on the surface but if you could see how many blueberry muffins I have eaten in my time it would definitely make you think differently.
YOU WILL NEED:
375g self-raising flour, 1 TSP baking powder, 200g caster sugar, 125ml vegetable oil, 125ml milk, 1 egg, 1 TSP vanilla extract, 300g blueberries (fresh or frozen) and a small amount of granulated sugar to sprinkle on the muffins before baking.
METHOD:
To begin make sure that you pre-heat your oven to 180°c/gas 4. Next you need to place all the dry ingredients in a large bowl such as flour, baking powder and sugar. Once you have done that you need to place the wet ingredients in another bowl so that you have the oil, egg, milk and vanilla separate. You then need to whisk together all of the wet ingredients before adding the wet ingredients into the large bowl with the dry ingredients and then combining them both together. Once you achieve a well mixed batter you need to add in the blueberries before spooning the mixture equally into a 12-hole muffin tray. Last but not least you need to sprinkle the batter with some granulated sugar and then bake for 30-35 minutes.
I really do adore these muffins and think that they a great alternative to icing laden cupcakes or any of the other highly calorific treats that you usually find me baking in the kitchen. I suggest you get up slightly earlier this weekend and rustle up some of these delicious muffins and enjoy a lazy morning with a fresh cup of coffee and a blueberry muffin, heavenly!
My bf loves blueberry muffins so I might just have to whip some of these up before he comes back from his trip.
