SUNRISE BREAKFAST YOGHURT.

Up until recently I would never have considered myself to be a breakfast kinda girl. I love a good brunch of a weekend but I would often find myself skipping breakfast in favour of an extra 5 minutes in bed most mornings. I put this down to the fact that plain old toast and sloppy cereal don't really appeal at the best of times let alone first thing in the morning. However since mixing up my breakfast options and adding in some tasty treats I have been fully converted to the breakfast bandwagon. 

Since stepping away from the processed cereals and boring bread I have been making the time to get a bit more experimental with my breakfast choices. I mean, it's only fruit and yoghurt so I've hardly revolutionised morning eating here but it's a pretty big deal if you are an avid breakfast avoider like I was. 

Not only does this sunrise breakfast yoghurt taste great but I genuinely notice such a difference in my energy levels after having had this for breakfast as apposed to toast or thin air. 

YOU WILL NEED:
400g strawberries, 4 passion fruits, 4 TBSP runny honey, 500g natural yoghurt and 4 TBSP granola. 

METHOD:
Purée half the strawberries with 1 TSP of water in a food processor or blender. Scoop out the passionfruit pulp and add it too the coulis. Sweeten to taste with a little honey if necessary. Layer up in a glass or jam jars; some sliced strawberries, yoghurt, coulis and honey repeating until all of the ingredients are used up. Finish with granola and then serve! 

This recipe serves four therefore is a great one for families or can just be cut down to create an individual portion. What I love the most about these breakfast yoghurts is that you can change them up so easily. Use a flavoured yoghurt such as coconut and layer up with chunks of pineapple and top with desiccated coconut for a tropical twist or even add some crushed nuts and dried fruit to the top instead of granola.
